12 Summer Pasta Recipes with Seasonal Veggies and Herbs

Pasta is a very popular dish loved by many and enjoyed all year around. There are so many pasta types and so many recipes to cook them. But there's definitely something special about the season of summer with its colorful vegetables and herbs that makes a pasta recipe even more enticing and tasty. Now that summer is here finally, let's check out some delicious and healthy pasta recipes which are also easy to make.

  1. Spaghetti with fennel, anchovies and pine nuts: Whip up a delicious supper for the whole family in just half an hour. This spaghetti recipe is equally sweet and salty.

Recipe:

  1.  Cut the fennel bulbs in quarters, remove the core and chop them up.

  2.  Cook the spaghetti in salted water. 

  3.  Heat some oil in a pan and saute the fennel. Then add garlic, anchovies, chili, currants, capers, parsley and pine nuts.

  4.  Add the pasta to the pan after draining the water. Add lemon juice and serve it immediately in the serving bowl.

  1. Spaghetti with fresh tomato sauce: The pasta sauce with fresh tomatoes is definitely the highlight of the recipe. The seasonal flavors stand out in this simple recipe.

 

Recipe:

  1. First of all, cook the pasta in the salted water as usual.

  2. Take a food processor and add tomatoes, chili, shallots, lemon zest, sugar, oil and vinegar in it. Make a smooth paste. Then add a bit of salt and pepper in it as well.

  3. Drain the pasta. Toss it together with the mixture you made and add shredded cheese for the maximum taste. Then garnish the dish with basil and serve immediately.

  1. Cook the pasta in boiling water and also add the peas in the last few minutes.

  2. Heat up some oil in a pan and fry the garlic and chillies for a few minutes. Also add the lemon zest.

  1. Cook the pasta according to the package instructions. Then drain the water and let it cool down.

  2. Boil the peas and beans in another pan. Drain them as well.

  3. Now toss together the pasta with the vegetables. Add soured cream, lemon juice, parmesan and season. Garnish with basil and lemon zest and serve hot.

Recipe:

  1. Preheat the oven to 400 degrees Fahrenheit. Take a baking sheet and add the cherry tomatoes, sliced zucchini and squash on it with a bit of olive oil. Sprinkle some salt and pepper over them and let them roast. After around 25 mins, you can take out the baking sheet. 

  2. Cook the pasta according to the package directions. Drain the water, saving one cup.

  3. Add the lemon juice, goat cheese, butter, garlic and red pepper flakes to the pot of pasta. Then add a bit of cooking water you saved while boiling the pasta. Mix everything together.

  4. Then add the roasted tomatoes and squash to the pasta. Toss everything together once again. Add salt, pepper and basil and serve in ceramic bowls.

6.  Zucchini Lasagna: Make use of the a very commonly available item of the summer, Zucchini, in this cheesy pasta recipe. This recipe has both the traditional lasagna element and  the goodness of veggies.

 

Recipe:

  1. Slice the zucchini and make the bolognese sauce.

  2. Grind the beef in small pieces and cook them until they get tender. Then add the pasta sauce you made.

  3. Add parmesan cheese, ricotta, egg, salt and pepper to make the ricotta mix.

  4. Take a casserole and spread the pasta sauce. Then add the zucchini slices, bolognese sauce and ricotta, mix evenly.

  5. Then add some grated mozzarella on it and repeat the layers. Add some more herbs and cheese. And let the lasagna cook for 40 mins.

Recipe:

  1. Cook the pasta according to the package instructions. Drain it well.

  2. Marinate the shrimp with salt and pepper.

  3. Put a large skillet over medium high heat and melt the butter on it. Add garlic, red pepper flakes and oregano. Cook for 2 mins.

  4. Add the shrimp and cook them for a few minutes and then set aside.

  1. Cook the pasta according to the package instructions. Drain and let it cool.

  2. Cut the tomatoes and add them to the serving bowl.

  3. Fry the sliced onion and broccoli in oil and add them to the bowl as well.

  4. Mix the vegetables and pasta together and add salt and pepper. Pour the Italian dressing over it. Toss everything together again.

  1. Boil the pasta and drain it. Save one cup of water.

  2. Take a food processor and add cashews, spinach, basil, milk, lemon juice, salt and pepper. Grind everything together and set the mixture aside.

  3. Fry the onion and garlic for a bit in a pan. Then add the cooked pasta, pasta cooking water and paste you made before. Stir everything together and cook until the sauce is thick. Serve hot.

    10.  Penne with Roasted Summer Vegetables Ricotta Salata: Make use of your summer garden or just visit a farmer's market to get your hands on some fresh summer veggies to try your hands on this delectable recipe.

Recipe: 

  1. Take a baking sheet and arrange the eggplant and zucchini on it. And tomatoes on another one. Drench the vegetables with olive oil, salt and pepper. Roast the veggies in a preheated oven for around 20 minutes.

Recipe:

  1. Preheat the oven to 400° F. Cut the sides of spaghetti squash, drizzle oil, salt and pepper and roast them for 30 to 35 minutes. Break up the squash strands.

  2. Heat up oil in a pan and add onions and bell pepper to cook. Then add tomatoes, zucchini, lemon zest and garlic. Cook them with salt, pepper and Italian seasoning until they become soft. Then stir in the shredded chicken.

  3. Stir the squash strands with the fried veggies and chicken. Add mozzarella and melt it in the oven for a few minutes.

  4. Garnish with parsley and serve hot.

    12.  Broccoli Bolognese with Orecchiette: This recipe combines the goodness of broccoli and sausage. And the outcome is definitely immaculate.

 

 

Recipe:

  1. Cook the broccoli in salted water and later break them in small pieces.

  2. Cook the garlic on a skillet for 2 mins. Then cook the sausage with a bit of red pepper flakes. Break up the meat in small pieces. Cook for 8-10 mins.

  3. Cook the pasta. Drain it and save one cup of water.

  4. Add the pasta cooking water, garlic, and cooked broccoli over the sausage.

  5. Add and mix everything together. Add butter and cook until it's melted. Then transfer the pasta to a bowl.

  6. Garnish with parmesan and red pepper flakes. Serve hot.
